Simply Roasted Watermelon Radish
Ingredients
8-10 Watermelon Radish (depending upon size)
2 Tbsp avocado oil
1 Tbsp fresh chopped parsley
2 tsp fresh lemon zest
Directions:
- Pre-heat oven to 375°
- Line baking sheet with aluminum foil
- Rinse & trim ends of radish (do not peel) and cut into wedges
- Toss radish wedge in a large bowl with oil
- Spread evenly in 1 layer on prepared baking sheet (do not crowd)
- Roast in oven for 30 mins. (Toss/turn after 1st 15 mins.)
- Garnish with parsley & lemon zest
