Simply Roasted Watermelon Radish


8-10 Watermelon Radish (depending upon size) 

2 Tbsp avocado oil 

1 Tbsp fresh chopped parsley 

2 tsp fresh lemon zest 



  1. Pre-heat oven to 375° 
  2. Line baking sheet with aluminum foil 
  3. Rinse & trim ends of radish (do not peel) and cut into wedges 
  4. Toss radish wedge in a large bowl with oil 
  5. Spread evenly in 1 layer on prepared baking sheet (do not crowd) 
  6. Roast in oven for 30 mins. (Toss/turn after 1st 15 mins.) 
  7. Garnish with parsley & lemon zest
