Watermelon Radish, Guava & Goat Cheese Salad with Pecans

Ingredients
Main
- 1 small head of Bibb or Butter lettuce – washed & torn
- 2 Watermelon Radishes – washed, sliced very thin (peeling optional but not necessary)
- 3 Guavas – cut into wedges (peeling & deseeding optional)
- ¼ cup lightly toasted chopped pecans
- 1 Tbsp fresh chopped chive
- Crumbled Goat Cheese – to taste
Dressing
- 2 Tbsp finely mince shallot
- ¼ cup champagne or white wine vinegar
- 3 Tsp Dijon mustard
- 1 Tsp Kosher salt
- 1/8 tsp fresh ground black pepper
- 2/3 cup Extra Virgin Olive Oil
Directions
- In a small bowl whisk together all ingredients EXCEPT olive oil.
- Gradually stream in olive oil while whisking constantly.
- Dress salad & gently toss if serving immediately. If not serving immediately, cover & refrigerate dressing until needed.
- Remove from refrigerator and whisk thoroughly before dressing salad.
